I love risotto~ but would never think of using chestnuts. That just goes to show that you can make risotto with just about anything!


Goodness, this sounds sublime and like meal fit for a king, or father. I look forward to reading your posts on Turkish food - yum!


This sounds wonderful, Johanna. I've never explored the savoury side of chestnuts but since they now sell them roasted, peeled and vacuum-packed at the supermarket, I have no excuse for not trying!

Johanna, I would forgive you for a plate of this. Normally I would never order anything with chestnut, but the minute you mentioned honey with it my flavour pairing chart that resides in my tastebuds went into overdrive and as it is a chilly late summer early autumn day here in Cape Town, the whole idea went down very well. Just off to try and find some chestnuts


Thanks Johanna, it is coming into chestnut season here and you reminded me about a dish that I converted for the Thermomix with chestnuts and mushrooms.

Turquoise is a beautiful book and the chef is one of life's beautiful people. He has opened a restaurant in Melbourne just recently. He has a website with some recipes from his other books too.
