that looks and sounds wonderful. so much so that i think i'll be roasting some tomatoes later today!

Anchovies are definately underused in England, most people seem to be afraid of them - "what can I do with such a small, salty fish?".

This recipe seems wonderful, tomatoes and red onion always adds a fresh touch anyway even without the rest of the recipe ingredients (which work perfectly together, by the way).


I can smell it, yes I can actually smell it. Smells fabulous. It is spring here in New Zealand and my home grown tomatos are already flowering. You have made the anticipation too much for me!


Yes! That will be yummy in my tummy. I agree Abby, if only more people would try to be a little adventurous with anchovies in their recipes. Tim I'm in NZ too. Hope you are close enough to where I live to smell it when I cook it!
