Nope! Didn't notice that one missing, but I am keeping my eye on the Spinach-Ricotta Strudel with Herb Sauce!!! Sounds phenomenal!

This was great! We were out of olive oil so I substituted butter in both the soup and the croutons. I used the bacon, finished the soup with white pepper, sea salt, and finely grated manchego cheese, and garnished with halved grape tomatoes in addition to the croutons. Thanks for a yummy, simple and light summer recipe, which was still fresh even after I fattened it up with butter and cheese.
