Mini sweetcorn fritters with avocado salsa
Thanks to all of you who have sent their terrine recipes in already, anybody out there who hasn't yet, I have great pleasure to announce that we've extended the deadline to the end of the month, new rule for all upcoming WTSIM instalments this year. After all, I've been a bit of a slacker and will be posting my own contribution tomorrw, but then, you don't turn 25 every day, an excuse my co-founders Jeanne and Andrew won't be able to use...
The terrines I have seen so far have all been amazing, a bit thin only on the traditional, meaty front, interestingly enough... but this will be a great collection of treats, believe you me! So, if you haven't already, get your terrine moulds out and send your contributions by the 31st of January!

Secondly, I'm just sending you my entry... thanks for inspiring me to play with old boring recipe and re-make it as an playful terrine dish!

Oh thank you thank you thank you! I have gone back and forth in my mind if I was going to attempt this or not. I finally gave in, I mean it is your birthday and all! But, so many things have gone wrong and it won't be set until way after picture time. I was going to ask for an extension...but now there is no need. Thank you!

Ha! Just as I hit "submit" on my comment to the announcement for this round of WTSIM saying I'd missed the deadline, I saw that the deadline is extended!
