Potato, spinach & smoked salmon pan with poached egg

Salmonspinachpotatopan At the moment, I am sacrificing my cooking time to get our impending move out of the way... never has there been a more perfect occasion for a thorough spring clean, but I am doing much more than that. I've made a vow to get rid of a third of everything, so with every drawer that I go through, every bookshelf I tackle, every box (still unopened since our last move) that I open I sort of separate the wheat from the chaffe to end up with only two thirds of what it contained originally. Never have a felt more at home in our area, as I find someone to greet me in every charity shop I pass by these days, result of me equally distributing the chaffe among them...
But there is an exception to the rule: my kitchen. I have been granted the right to keep all the plates, trays, bowls, pots, pans and other cooking peraphernalia that I deem worthy taking along, so once again, I find myself hesitating whether the right day will come for me to unpack my pasta machine, use the breadmaker and dust off the juice extractor and other things that seemed like a good purchase at the time.
But I do take the time to go deep into my pantry and uncover a whole host of foodstuff I never even knew I had - some of it well past its best-by date, so wholesome exercise alltogether. But after a day's rummaging around, the last thing I fancy is cooking an elaborate meal and in order not to resort to take-aways, I end up cooking a lot of food that doesn't necessarily involve getting out of my trackpants to run to the supermarket. So convenience is key, and if it makes use of anything I can find that then won't need to be moved from A to B, that's an added benefit. And this is exactly how this dish "happened" - some new potatoes, a pack of spinach, some smoked salmon from the freezer et voilà... not the most sophisticated of dishes, maybe, but there'll be plenty of time for cooking and entertaining in our new abode!

Potato, spinach & smoked salmon pan with poached egg
(serves 2)

500 g new potatoes
1 clove garlic (crushed)
200 g spinach (washed and drained)
200 g smoked salmon
2 eggs
some oil
1 dash cider vinegar
cracked black pepper

Cook the new potatoes until almost soft, ca. 15 minutes. Heat some oil or butter in a pan and fry the garlic in it. Add the potatoes and fry until nicely browned and cooked through.
Poach two eggs in a pot of water with a dash of vinegar - 3 minutes.
Meanwhile, tear the salmon into bite-sized pieces and add to the potatoes. Fold in the spinach until wilted, then arrange on two plates with yhe poached eggs on top. Sprinkle with cracked black pepper.

That looks lovely! Another warm potato salad combination I really enjoy is one with spinach, poached eggs, crispy bacon and fresh parmesan shavings.
